Hi, this is all about food, and where we can post our favourite recipes both Scottish and International. Where we can help others if they are having a dinner party and would like a new dish to serve, or to impress. If you have taken a photo of a desert or any other dish post it with the recipe.
Since we are in the Scottish section I will post one of our best.

SCOTTISH SHORTBREAD




You'll Need:

250g (8oz) butter
1/3 cup caster sugar
1/4 cup ground rice or rice flour
2 1/4 cups plain flour

Directions :

Have butter at room temperature. Cream butter and sugar until light and creamy. Stir in sifted flours in two batches when mixture becomes to stiff to stir, use hand to combine ingredients. Turn on to lightly floured board, knead lightly until smooth. Mixture can be made into rounds and then cut into wedges, or pressed into a wooden mould, or divide the mixture into two tins. Prick with fork. Bake in a slow oven for 45 minutes. Stand in tin for 10 mins. then place on cooling rack. Shortbread can be sprinkled with caster sugar or left plain.

If you prefer a much more open texture what I do is use one cup of Self raising flour instead of all plain flour eg. 1 1/4 cups plain flour and one cup S.R flour. Ann

Dundee Cake

You will need:

8oz butter
8oz soft brown sugar
10oz plain flour
4oz glace cherries
4oz sultanas
4oz currants
4oz raisins
2oz almonds
4 beaten eggs

Directions :

Mix together flour and fruit and chopped nuts leaving some nuts whole for decoration Cream together butter and sugar until light and fluffy Beat in the eggs, fold in the flour and fruit Grease and line tin keeping greaseproof paper about 1 to 2 inches higher than rim of the tin Make a slight hollow in centre of mixture Bake in a slow oven 130 deg c for 3 hours

This is one of my favorites.

Once tasted you can' stop eating them, try topping them with chocolate.


Biscuits - Crunchy oatmeal biscuits


You'll Need:

4ozs s r flour
4ozs butter or marg
3ozs caster sugar
1 cup porridge oats
1 teasp golden syrup
3 teasp boiling water
a few drops vanilla ess

Directions :

Cream together butter and sugar Add syrup, boiling water, and vanilla ess Stir in the flour and the oats, and mix well Roll into balls, about a large teasp should get around 28 Bake on a greased baking tray in a moderate oven around 170deg c for a fan forced oven for 15-20 mins When cool can be decorated with icing or melted choc.

Fruit Cake with Whisky


You'll Need:

2 cups plain flour
1/4 cup SR flour
250g butter
1 1/2 cups brown sugar
5 eggs
1/2 cup ground almonds
1 cup chopped glace apricots
1kg mixed fruit
1 cup whisky
2 teaspoon mixed spice
1/2 teaspoon each ginger and cinnamon and nutmeg

Directions :

In a bowl place the fruit, apricots and almonds, stir in the whisky, cover and leave standing for 2 days. When the fruit is ready beat the sugar and butter until light and creamy. Add eggs one at a time, beating well between each egg. Sift flours, salt, mixed spice, ginger, cinnamon, nutmeg together. Stir in half of the fruit mixture into the cream mixture and the other half into the flour mixture mix well. Then combine both mixtures until well blended. Grease and flour a 23cm tin and spread the mixture into the tin. make sure top is spread even. Bake in a moderate oven for 30 minutes, then reduce the heat to moderately low and bake for a further 2 hours, or until cooked and the skewer comes out clean. Place on a wire tray to cool wrap in foil to keep moistutre in, leave until cold. When cold decorate with the whisky icing.In a bowl place the icing sugar , and put bowl over a simmering pot of water, add the whisky a little at a time stirring until the mixture is just dropping from the spoon. Spread on the cake letting it run down the sides and decorate with cherries.

This is a great thing to have fried with bacon eggs and black pudding.

Potato Scones

You'll Need:

4oz S.R. flour
4oz floury sieved potato
1-2 oz butter or marg.
milk to mix
pinch of salt

Directions :

Sieve together flour, salt,rub in marg. It is best if the potato is freshly cooked. Mix the potato well with the flour before adding the milk. The dough can be cut into smaller pieces, and rolled out to 1/4 inch thick circle and then cut into triangles. Heat heavy fry pan or griddle and cook till lightly brown,then turn over and cook other side. Cool on wire tray. Fry with bacon and eggs, black pudding etc.

Hi. here is a great recipe, just spread with butter and have with a cuppa. Enjoy

This is the recipe for

Ginger Bread

12ozs S R flour
1 teasp ground ginger
1 teasp mixed spice
6ozs sugar
4ozs butter or marg
2 tablespoons treacle
1 egg beaten with one cup milk

Directions :

Mix flour and spices. Beat the sugar and butter to a cream, and stir in the treacle, then add the dry ingredients and the beaten egg and milk alternately a little at a time and mix thoroughly. If liked, sultanas, or other fruit may be added, the fruit is best added to the flour. Put into greased tin and bake in a moderate oven 170 deg c for 3/4 of an hour

Yummy Scottish Tablet, never could get it right myself so resort to buying it

4 oz butter or marg
2 lb sugar
1 large tin condenced milk
1 cup full milk
flavouring, ie. vanilla, peppermint etc.

Melt butter and full milk together in a large pan, add sugar and melt very slowly, Boil for 10 minutes, stirring all the time Gradually, add condenced milk amd boil for 10 minutes more. remove from heat and beat hard for 2-3 minutes. test by dripping a lump into a cup of cold water. pour into greased tray, mark out before completely cool.
