I am like you Betty pounds and onces is what I work with. They make a potted meat here, but it is nothing like the type we got a home. If there are any type of meals or recipes that anyone may like, we will try to get it for you, just let us know.

Here is a nice refreshing dessert.

1 large ripe pear
1 medium-sized orange
1 cup sliced bananas
1 cup ripe peach slices
2 teaspoons lemon juice
1 tablespoon dry sherry
1/2 cup caster sugar
2/3 cup water

Heat the water and sugar until boiling, stirring until sugar has dissolved, then simmer for 2 minutes. Stir in sherry and lemon juice, leave to cool while preparing the fruit.
Core, peel and slice the pear. Peel orange, rem,ove the pith, cut into sections, then cut these into halves. Add all the fruit to the syrup and chill before serving, may be served with cream or ice cream.

Here is a nice lunch time snack, can be cooked on the barbecue or in a fry pan, this is up market egg bread. Use 2 slices bread per person, you can vary what you put on the sandwich I like to put nice crispy bacon instead of salami.

8 slices thick bread
4 slices mozzarella cheese
8 slices salami, or crispy bacon
2 ripe tomatoes, sliced
2 eggs beaten with a little milk
sliced black olives

Dip the bread into the egg, then place in pan, lightly brown and then turn over to other side, now place cheese, tomatoes, salami,olives on one slice then top with the other slice, uncooked side up. When brown turn over and cook other side. It makes quite a filling snack.

Here is a nice meat loaf, just perfect for a summer picnic when cold or with potatoes and vegetables.


500g good mince
500g bacon
2 eggs
1/4 nutmeg grated
1 medium onion, finely chopped
salt and pepper.

Mix all the ingredients together thoroughly and then roll into a sausage shape. Press into a well greased steaming bowl or tin and cover with a greased proof paper. Steam in a pan of boiling water for about 1 1/2 hours. Leave in container till cold. Slice as required, serve with a green salad, and perhaps a potato salad.

Most of us like apple tarts so hear is a nice recipe.

Apple Frushie

For the Pastry:

200g plain flour
50g butter or marg.
50g lard
water to mix

Apple filling

250g apples
50g clear honey
3tsp rose water

Preheat oven to 200deg.C
To make the pastry. Sift the flour into a blowl and add the salt. Rub in the butter and lard till the mixture is like fine breadcrumbs. Sprinkle in a little water and mix to a stiff dough with a round blade knife. Place in a cool place to rest. Roll out the pastry and line greased 91/2 inch dish, cut off excess pastry and roll into strips for the top of the tart. Peel and slice the apples very thinly. Lay them on the base of the tart. Now sprinkle with rose water and pour the honey evenly over the apples. Lay the strips of pastry in a latice pattern on top of the apples. Seal the edges with a little water.
Bake in a hot over for 25-30 minutes. Sprinkle with caster sugar and serve with cream or ice cream. Enjoy.
