but I am very partial to Italian food and make a mean Spag-Bol, with slices of garlic bread, yummy.

How nice is this to start a meal.

Baby Stuffed Potatoes with Caviar
as a Starter.

You'll Need:

12 baby potatoes (baked until cooked)
124gms cream cheese
50gms fresh chopped herbs
100gms salmon caviar

Directions :

Take each potato, cut the top off and remove the inside and place into a bowl. Add fresh chopped herbs, cream cheese and mix well. Spoon the mix back into the potatoes and top with the salmon caviar

Here is a lovely salad.

Avacado Green Salad

1 lettuce
1/3 cup parsley
1 eschallot-chopped
1 green pepper
1 avacado
vinaigrette dressing
garnish with croutons fried in garlic oil.

1. Tear lettuce leaves into bite sizes pieces.
2. Slice eschallot using all the green stem.
3.Cut capsicum in half and slice into thin strips.
4. Roughly chop the parsley and combine all ingredients with slices avacado.
5.Just before serving, toss with vinaigrette dressing.
6. Garnish the green salad with cubes of bread fried until crisp and brown in garlic flavoured hot oil.
This salad is delicious served with cold meat or seafood.

If you like balsamic vinegar you will love this salad.

Avacado and balsamic chicken salald.

4oog skinless chicken breast fillets
1 spanish onion, sliced into wedges
1 clove garlic, crushed
1/4 cup balsamic vinegar
1 tbs honey
1 tbs dijon mustard
1 bag gourmet salad
200g green beans, blanched
1 pkt. truss tomatoes, washed and sliced in half
1 avacado, sliced
3 tbs toasted pine nuts
shaved parmesan cheese
salt and pepper to taste.

Heat the oil in a large non-stick frying pan over med. heat. Add the chicken breasts and cook for 4-5 minutes on each side or until cooked through. Remove from the pan.
Add the onion and garlic to the pan. Saute for 4 mins or until onion is tender. Whisk together balsamic vinegar, honey and dijon mustard. Return chicken to the pan and pour over the dressing. Simmer for one minute.
Remove chicken from the pan and slice.
Toss with salad leaves, beans tomatoes, avacado, pinenuts and dressing. Serve toped with shaved parmesan cheese. Season to taste.

To toast the pinenuts put into a non-stick fry pan and heat on med. to high, stirring all the time in case they burn. When ready shake on to a paper towel to cool.

Another wee hint, to keep the onion
wedges form falling apart, do not cut the bottom off the onion, then cut in half and quarters and it should stay together. Enjoy I do.

This one is for the steak lovers.
The best meat to use is Rib Eye, Fillet, Rump, as they cook quite quickly and are tender cuts of meat.
I like to place some olive oil with garlic steak, and steak seasoning mixed together in the fry pan if cooking indoors, and place oil mixture on a plate and place meat on plate and cover meat with oil mixture if cooking on the barbecue.

Forget the diet girls this is a really yummy cheese cake, once you try this one you will be back for more. This tastes every bit as good as it looks.

Orange Cheesecake ( no baking required )

Ingredients for the crust:
2 cups crushed sweet biscuits
1 tablespoon sugar
2 tablespoon cocoa
4-6oz melted butter or marg.

Combine all ingredients. Press into sides and base of an 8 inch spring-form tin. Chill till firm and set.
Filling :
2 eggs separated
3/4 cup sugar
1 1/2 tablespoons gelatine
1 2/3 cups undiluted Carnation
Evaporated Milk
1 tablespoon grated oranger rind
1 teaspoon vanilla essence
1/2 cup orange juice
8 oz sieved cottage cheese

Beat Sugar, egg yolks and gelatine together. Stir in 2/3 cup undiluted Carnatoin Milk. Chill remainder till ice crysals appear round the edges of dish. Stir over medium heat till gelatine dissolves and custard coats the spoon. Add the orange rind and vanilla essence. Cool, blend in cheese. Chill till mixture moulds from a spoon Beat egg whites till stiff. Whip Carnation Milk to soft peaks, add orange juice, whip till stiff. Beat in gelatine mixure and fold in egg whites quickly. Pour into biscuit shell. Chill 6-8 hours or overnight.

The Glaze:

1/2 cup orange juice
1 desertspoon cornflour
1/4 cup sugar
1 desertspoon lemon juice

Combine sugar and cornflour in a pan, blend in juices. Stir till boiling. Cool, spoon over cake top Decorate with cream and strawberries, and some chocolate curls. If you like the topping thicker make double the amount of glaze. Then top with strawberries and cream and some grated chocolate if desired. Serves 6-8
