Pan fried White Bait
1/2 -1 kg white bait
1 1/2 cups plain flour
1/2 cup fresh parsley or mixed herbs
2 tablespoons olive oil
1 clove garlic, crushed
Combine flour and herbs in a large bowl. Lightly coat white bait in lour mixture, shake off excess flour. Heat olive oil in a nonstick frying pan and saute garlic for 1 minute.
Add white bait, cook until golden brown.
Serve with salad.
