Here is a nice Entree

Salmon Mousse:

220g can of red salmon
1/2 tablespoon brandy
1/4 teaspoon chilli sauce
juice of 1/2 a lemon
1 1/2 tablespoons mayonnaise
1 teaspoon gelatine
1 tablespoon water
1/4 cup cream
2 teaaspoons chives
salt and ground black pepper



Blend salmon with the juice of half a lemon, chilli sauce, brandy, mayonnaise, pepper and salt in a food blender until smooth and creamy. soak gelatine in water and dissolve over hot water. Cool slightly. Add to mousse mixture and combine thoroughly. Lastly fold in the cream and pour into an oiled mould. Sprinkle with chives. Allow to set in the refrigerator, turn out of mould and serve with toast or a crisp bead.

Here is a very nice chocolate cake and not to hard to make.


ingredients:


4 oz butter or marg.
2eggs
1 small cup caster sugar
1 to cup S.R flour
2 tablespoons cocoa
1/2 cup milk
2 tablespoons coconut

Place the coconut in the milk and let soak
Cream butter and sugar
Add beaten eggs and beat well
Then add coconut and milk before dry ingredients
Add flour and cocoa a bit at a time
Cook in a moderate oven (180 degs) for 35-40 mins.

Topping

Icing
1 tablespoon melted butter
1cup icing sugar
2 dessertspoons cocoa
mix together adding more icing sugar as required.

Or I melt Cadbury choc. and pour over then some grated chocolate on top. Enjoy.

Here is a very light biscuit.

Viennese Biscuits

250g butter
1/4 cup caster sugar
1/2 teaspoon vanilla
2 cups plain flour
pinch salt
125g chocolate

Cream butter and sugar until light and fluffy.
add vanilla, and carefully add sifted flour and salt.

Spoon into a piping bag fitted with a large star tube. Pipe into finger lengths on a lightly greased oven tray. Bake in a moderate hot oven for 15 to 20 mins. Cool on tray. Can be left plain or sandwiched together with some raspberry or apricot jam, then dipped in melted chocolate on one end or spread on top with chocolate. If you prefer an even lighter texture I use 1 cup plain flour and one cup S.R flour.

Here is a nice light Banana cake.

4oz. butter or marg.
1 cup sugar
2 eggs
1/2 cup milk
2 cups S.R flour(sifted)
1/2 teaspoon carb-soda
pinch salt
2 or 3 bananas ( mashed)depending on size

Cream butter and sugar. Add well beaten eggs and beat well, add mashed bananas. Add flour and salt alt. with the milk in which the soda has been mixed and disolved. Divide mixture between 2 sandwich tins that have been lightly greased, and lined with greaseproof paper on the bottom. Bake in moderate oven for 35mins.

Here is a nice Potato and Leak soup for the cooler weather coming up


Potato and Leak Soup


500g potatoes, peeled and sliced thinly
500g leeks, cut into thin slices
4 cups chicken stock
1 small onion, thinly sliced
2 tablespoons butter
salt and pepper to taste
1/2 cup cream
1 tablespoons chives ( fresh or dried)



Melt butter in a saucepan and slowly cook leeks and onion until golden brown, stirring all the time. Add potatoes, stock, pepper and bring to the boil. With the lid on cook slowly for about 45 minutes or until vegetables are very soft. Allow to cool and place in a blender. Add cream and salt.
To serve hot or cold and sprinkle with chives. And
serve with nice crusty bread.

Hi Anne, looking forward to trying many of your recepies, as you know I was in hospital unexpectedly a couple of weeks ago, had to have my gall bladder removed, ok now though and able to eat things I have not been able to for years, I have also stoppe smoking, been fag-free for a month now, have promised myself a trip to Australia to find relatives and meet friends made on the internet, as you know I am involved with the FFTW (friends from the wemyss) site and we have decided our next reunion will be in Oz in October/November 2009, so have a lot to save up for.

Hi Betty, I am very glad to hear from you and pleased that you are feeling better, it makes such a difference when you can eat without the pain afterwords. That sounds good about the FFTW having there get together over here, I will be looking forward to seeing you. I have more nice recipes to add just been so busy.
