Here is an Italian recipe to enjoy.
Chicken Parmigiana You'll Need: 6 chicken breast fillets 6 slices mozzarella cheese 2 large eggs 15 g butter 1/2 cup grated parmesan cheese bit less than 1/4 teaspoon garlic powder 1/4 teaspoon dries basil 1 cup dried breadcrumbs 1 teaspoon salt pinch black pepper 1/2 cup vegetable oil 1x 400 g tomato puree Directions : 1. Prepare baking dish, spray with non stick cooking oil. Preheat the oven to 180 deg. c. 2. Place eggs, salt, and pepper in a bowl and whisk until blended. Dip chicken in mixture and then coat with bread crumbs. 3. Place oil in frypan and add the chicken and cook at medium to hot. Cook until browned on both sides, about 3-4 minutes per side. Remove from the pan and drain. Now arrange the chicken in dish. 4. Using a paper towel wipe the fry pan, Combine tomato puree, basil, and garlic powder and mix well. Bring to the boil, stirring occasionally; reduce the heat. 5. Stirring occasionally, simmer until mixture thickens, around 5-6 minutes. Now stir in the butter. Pour over the chicken and sprinkle with parmesan. 6. Place in the oven and bake for 30 minutes covered, remove cover and top with mozzarella cheese. Cook for 10 minutes more or until cheese melt Chicken Parmigiana |

Hi here is a Mexican recipe.
Looking forward to many posts. Acapolca Chicken You'll Need: 2 skinless, boneless chicken breast halves - cut into bite-size pieces 1 tablespoon chili powder, divided salt and pepper to taste 1 tablespoon olive oil 1 cup chopped green bell pepper 1/2 cup chopped onion 2 jalapeno peppers, seeded and minced 1 large tomato, cut into chunks 10 drops hot pepper sauce Directions : Season chicken with 1/2 tablespoon chile powder, salt and pepper. Heat oil in a large skillet over medium high heat and saute seasoned chicken for 3 to 4 minutes, or until no longer pink. Remove from skillet with a slotted spoon and keep warm. In same skillet, stir fry bell pepper and onion until soft. Add jalapeno peppers, tomatoes, remaining 1/2 tablespoon chile powder and hot pepper sauce. Cook, stirring, for an additional 3 to 5 minutes; add chicken and stir fry for 2 minutes more. |

This is everyones favorite, quick and easy,add nice green salad, and garlic bread.
Bacon, Egg and Cheese Pizza You'll Need: 1/2 lb bacon, cooked and crumbled 8 oz shredded Swiss cheese 4 eggs 12 oz sour cream 2 tbsp chopped fresh parsley Directions : Roll pastry to fit into a 12-inch pizza pan. Bake at 425 for 5 minutes. Sprinkle bacon and cheese evenly over crust. In a bowl, beat eggs, sour cream and parsley until smooth; pour over pizza. Bake for 20-25 minutes or until pizza is puffy and lightly browned. |

Here is an easy dessert that comes out right every time, and so easy to make.
Tiramisu : 250g mascarpone cheese 300 ml. carton thickened cream 3 eggs, separated 3 tablespoons caster sugar 3/4 cup Marsala 1/3 cup strong black coffee 250g pkt. sponge fingers 1 tablespoon cocoa Beat mascarpone cheese and cream together until thick. Add egg yokes and 2 tablespoons of the caster sugar and beat agin until pale in colour. Whisk the egg whites until soft peaks form. Add the remaining sugar and beat until stiff. Fold lightly into the mascarpone mixture and set a side. Combine Marsala and the coffee. Dip sponge fingers into the coffee mixture one at a time, until wet but not soggy. Arrange a layer in the base of a large glass bowl. Cover the sponge finger layer with some of the mascarpone mixture. Continue dipping and then layering sponge fingers with mascarpone mixture, ending with mascarpone on top. Sprinkle cocoa over the top. Chill over night. |

Here's another great dessert.
Stawberries with Cointreau : 1 punnet strawberries 2 large oranges 3 passionfruit 1/4 cup sugar 2 tablespoons water 3 tablespoons Cointreau 300ml caton cream Wash and hull strawberries; peel and segment oranges, reserve any orange juice; remove pulp from passionfruit. Combine all fruit with Cointreau, add reserved orange juice, cover, refrigerate. Combine sugar and water in saucepan, stir over heat until sugar is dissolved, bring to boil, remove from the heat, cool. Add to fruit mixture, cover,refrigerate until ready to serve. Top with whipped cream. |

Pavlova always a great dessert this looks great and not to hard to make.
Brandied Cherry and Chocolate Pavlova 2 cups dark pitted sour or morello cherries,drain 1/4 cup cherry brandy 6 whole cloves 2 sticks cinnamon sticks 6 egg whites 1 1/2 cups caster sugar 450g dark chocolate, chopped 2 tablespoons cocoa powder 2 1/4 cups thickened cream or pouring cream fresh cherries for decoration a little cornflour for dusting Place cherries, brandy, cinnamon sticks and cloves in a bowl, cover and leave for several hours or overnight. Preheat the oven to 150deg.C and line 3 baking trays with non stick baking paper. Then draw a 20 cm circle on each sheet, and sprinkle with cornflour. Beat the egg whites untill stiff peaks form. Gradually add the sugar beating well between each addition. Beat until thick and glossy and all the sugar is dissolved. Now beat in the cocoa. Now spread the Meringue over the 3 circles. Bake for 1 hour, or until crisp, then turn the oven off, leave the meringues in the oven until cold. Put 200g chocolate and 1/4 cream in a small bowl and stand over a pan of warm water. Stir until chocolate has melted and the mixture is smooth. Let the mixture cool a little before spreading over the 3 meringue circles, not right to the edge. Beat the remaining cream until firm peaks form and then spread a third of it over one meringue disks, top with half the drained cherries. Put a second meringue layer on top, spread with half the remaining cream and the rest of the cherries. Put the last meringue on top and spread with the rest of the cream. To Decorate pavlova with fresh or tined cherries and lots of chocolate curls. This photo is the one I made Attached file: ![]() ![]() |
