Everyone likes to eat meatballs, here is a recipe for Greek meatballs and a yoghurt dip.

1kg lean beef mince
1 cup fresh parsley, chopped
2 eggs beaten lightly
2 teaspoons dried oregano
2 brown onions, finely chopped
7 slices white bread, with crusts cut off
1/4 cup flour
1/4 cup flour
200g Greek style yoghurt
2 tablespoons fresh chopped mint
1 clove of garlic, crushed



1. Soak bread in water for 10 minutes, then drain and squeeze out as much water as possible.
In a large bowl place bread mince, onion, egg, parsley and oregano. Season to taste and mix well. Place in the refrigerator for 1 hour.
2. Roll heaped teaspoons of mixture into balls, dust lightly with flour, shake any excess off. Heat oil in a large frypan on medium.
Place balls in frypan, shake pan regularly, for about 5 minutes or until cooked through.

3. For the dip place yoghurt, mint and garlic in a bowl and mix till combined. Serve with the meatballs.

Here is a nice light lunch with a nice crusty bread and butter.


Mixed Beans and pasta


1 450g tin of mixed beans
2 cups spiral pasta
2 tablespoons lemon infused olive oil 1/2 cucumber sliced
1/2 punnet grape tomatoes
cut in half
1/3 cup small basli leaves


Cook pasta , drain well rinse under cold water.
Combine all ingredients in a large bowl and put in fridge until ready to serve, with crusty bread and butter.

Looking for a nice light and tasty lunch, how about this.


Bruschetta with Avacado and Basil.


2 Roma tomatoes, finely diced
2 avacados, finely diced
8 fresh basil leaves cut into slivers
1/2 red onion, finely diced
4 thick slices sourdough or other Italian bread
1 tablespoon olive oil freshly ground black pepper
1 tablespoon lemon juice



In a bowl combine the avacado, onion, basil and lemon juice refridgerate for 20 minutes. Grill or toast the bread, brush with the olive oil and top with the avacado mixture. Salt and pepper to taste.

Here is a tasty chicken dish from Mexico.



Acapulco Chicken


You'll Need:

2 skinless, boneless chicken breast halves - cut into bite-size pieces
1 tablespoon chili powder, divided
salt and pepper to taste
1 tablespoon olive oil
1 cup chopped green bell pepper
1/2 cup chopped onion
2 jalapeno peppers, seeded and minced
1 large tomato, cut into chunks
10 drops hot pepper sauce

Directions :

Season chicken with 1/2 tablespoon chile powder, salt and pepper. Heat oil in a large skillet over medium high heat and saute seasoned chicken for 3 to 4 minutes, or until no longer pink. Remove from skillet with a slotted spoon and keep warm. In same skillet, stir fry bell pepper and onion until soft. Add jalapeno peppers, tomatoes, remaining 1/2 tablespoon chile powder and hot pepper sauce. Cook, stirring, for an additional 3 to 5 minutes; add chicken and stir fry for 2 minutes more.

An easy to make soup for a cold day.



French Onion Soup


You'll Need:

4 Small onions,
0.50gram Butter,
1 cup beef broth,
2 cups water,
0.50c Dry white wine,
Salt & Cayenne pepper, Slice of French bread, Swisscheese, 2 soup spoons flour.


Directions :

Cut onions in 1/2 rings, roast onions in butter, add flour until slightly roasted, add all liquids, salt & pepper and let simmer for 10 min. pour in soup bowl, top with tosted bread and cheese and bake until cheese is melted.

How about these meat balls.

Meat balls with cherry tomatoes.


500g best mince
25 cherry tomatoes
1 egg
2 cloves garlic, crushed
1/2 cup softy breadcrumbs
oil to spray
tomato sauce, or sauce of your choice to dip meatballs in.


Heat your oven to 200 deg C/180 for fan forced.

In a bowl combine mince, egg, garlic and crumbs. Cover each tomato
with the meat mixture. Place in fridge for about 30 minutes. Before cooking spray the meatballs with oil. Brown in batches in a hot non-stick pan. Then bake in a baking dish for 25 minutes.

Here is a nice tasty pasta dish.

Pumpkin fetta and spinach cannelloni


Place fresh sheets lasagna in boiling water to soften and lay out flat. Place cubes of roasted pumpkin, crumbled feta and baby spinach leaves, roll up pour over napoli sauce, a sprinkle of Parmesan cheese and bake in a moderate oven for about 20 minutes. Serve with crusty bread.
